Soup makes for a quick and easy comfort food. Actually we can say SOUP is a veggie Vehicle.One meal soup may consist of cereals, legumes or rice in combination with vegetables. It’s called one meal as it gives you whole meal in just one bowl of soup. Here I have taken rice.

Ingredients
  

  • 1 tbsp butter
  • 1 tbsp plain flour
  • 1 onion finely chopped
  • 1 carrot finely chopped
  • 600 ml Approx 3 cups dark vegetable stock
  • 1/2 teacup cheese (grated)
  • 1/2 teacup cooked rice
  • 1/2 teacup Almond milk/coconut milk
  • Salt,Peper and lemon juice as per taste

Ingredients for Dark Vegetable Stock

  • 5 cups water
  • 1 potato grated
  • 1 carrot grated
  • 10 french beans finely chopped
  • 2 tomatoes finely chopped

Instructions
 

Recipe for Dark Vegetable Stock

  • Heat the oil and  add 1 grated potato, 1 grated carrot,10 finely chopped French beans and 2 finely chopped tomatoes and fry them until well browned. Add water and boil it till you have 3 cups of stock remaining . Now strain it and keep it aside.
  • Note: the strainedvegetables can be frozen for 1-2 days and can be pureed and added to a thicksoup like Spinach , tomato Etc.

Recipe for the Soup

  • Heat the butter in a vessel and fry the onions and carrots for 3 minutes.
    2.     Add the flour and fry again for ½minute.
    3.     Add the vegetable stock and cook it for 20 minutes.
    4.     Add cooked rice cook for few minute still the soup is mixed well with rice.
    5.     Add cheese salt and pepper, stir well.
    6.     Add coconut milk/almond milk cook fora minute n switch of the stove.
    7.     Serve hot in a serving bowl and add lemon juice as per taste.
