It’s time for celebration and festivity as Christmas week is near. So Treat your family and friends with our super delicious and aromatic fruit cake loaded with nuts and berries. Plum cake is special fruit cake with easy recipe without Liquor and eggs. So we have Christmas cake recipe for you.

As we have used nuts, berries, Grape juice and spices, this is perfect blend of Vitamins and protein. Spices like Cinnamon, Nutmeg and Cardamom give sweet Aroma in Chill winter. Yes… you are imagining an Aroma and keen to make it then Let’s start now.

So here is the Christmas cake recipe :

INGREDIENTS:

  •  2 cups All purpose Flour
  • 1 tsp Baking powder
  • 1 tsp Baking soda 
  • 1cup Brown (Damrera) Sugar
  • 1 cup Oil
  • 1 cup Water
  • 1 cup / enough to soak the berries -Tropicana Grape juice
  • 1 1/2 cup Chopped nuts and Berries ( cashews, almonds, walnut, apricots, raisins , figs, dates cherry, cranberry )
  • Pinch of fresh crushed Cinnamon powder, nutmeg powder  and cardamom powder
  • Pinch of salt
  • Freshly grated Orange zest
  • 1 tsp Vanilla essence

So here is the Christmas cake recipe :
Prep Time 10 mins
Cook Time 45 mins
Soaking time for berries 5 hrs
Course Dessert
Servings 5 people

Ingredients
  

  • 2 Cups All Purpose flour
  • 1 tsp Baking powder
  • 1 tsp Baking soda
  • 1 Cup Brown sugar
  • 1 Cup water
  • 1 cup oil
  • 1 1/2 cup nuts and berries chopped
  • 1 cup/(enough to soak berries) Grape juice I used Tropicana juice. You can use of your choice.
  • pinch of cinnamon powder, nutmeg powder and cardamom powder each
  • Grated orange zest
  • 1 pinch salt
  • 1 tsp vanilla essence

Instructions
 

  • Chop and Soak the berries in grape juice for 5 hours  
  • Chop and keep the nuts aside.
  • Beat oil in warm water and add sugar to it.
  • Sieve together flour, baking powder and baking soda.
  • Add dry ingredients to the liquid sugar mix, part by part.
  • Add cinnamon powder, nutmeg  powder and Cardamom powder to the Batter.
    Grate in some orange zest , add a pinch of salt to the batter.
  • Mix nuts and soaked berries to the Batter. The Batter is almost same amount as the mix of Nuts and Berries.
  • Add the Batter Mix to the greased baking tin of about 8 inches or loaf tin.
  • Bake at 180 degrees in preheated Oven for 40 minutes.  
  • You can smell the Aroma of spices as the Cake is done. ENJOY!
