Turmeric Root is an orange-coloured spice that is imported from the country of India and it is part of the ginger root family. Turmeric comes from the curcuma longa plant . When turmeric root is used raw, it is an extremely powerful plant. By adding this powerful plant to your healthy diet plan, it is one of the best things you can do for improving your long term health. So Today we will see how to prepare turmeric curry.

Turmeric root curry is delicious and healthy recipe which everyone should make twice in a month and all your family members can consume it. You can serve this curry with Jowar or plain flour Roti or Paratha with Home made butter.

INGREDIENTS FOR TURMERIC CURRY 

  • 200 gm fresh turmeric root (Approx.5-7 medium sized roots)
  • 50 gm ginger root
  • 2 small onion
  • 12-16 cloves garlic
  • 2 small tomato
  • 4-6 green chillies
  • 100 gm ghee
  • 1/2 tbsp cumin powder
  • 1/2 tbsp corriander powder
  • 1/2 tbsp Saunf (Fennel Seeds)
  • 1/4 tbsp chilly powder
  • 250 gm curd OPTIONAL
  • Salt to taste
  • Corriander leaves for garnishing

INSTRUCTIONS 

  • First of all grate Washed and Peeled turmeric roots and ginger roots separately.
  • Chop the onions in ring form. Crush garlic cloves and keep them aside.I always prefer hand crushed Garlic and ginger in all my dishes as it gives better flavour.
  • Finely chop the tomatoes. cut chillies in thin strips.
  • If you want to use curd in the curry then add all the spices powder and salt into curd and mix them well. Keep it aside.
  • Heat the ghee in a pan and add grated turmeric into it. Cook for 4-6 minutes on slow flame ot till it is golden brown. Switch off the stove and remove it in a bowl.
  • Now again heat the ghee which is remained in a pan, saute onions till it is brown then add tomatoes and cook them for 5 minutes. Add salt to taste.
  • Remove onion tomatoes in a bowl.
  • Now heat remained or 2 tbsp ghee in a pan and add crushed garlic saute it. Then add grated ginger and green chillies and mix well. Saute for a minute.
  • *OPTIONAL*If you want to add curd then add spiced curd into above mixture and cook it on slow flame till it starts boiling and you can see bubbles into it.Add cooked turmeric roots, onion, tomato and salt to taste, mix well. Cover the lid and cook them for 12-15 minutes on slow flame.
  • If you are Vegan and not consuming curd then after sauteing garlic ginger Add cooked turmeric roots, onion, tomato all the spices (Chilly powder, cumin-coriander powder and fennel seeds powder) and salt to taste.
  • Cook them on slow flame for 12-15 minutes by covering a lid. Mix them well in intervals and add water if required to cook them well.
  • Serve in a serving bowl, garnish with coriander leaves and chilly. You can have Roti with this curry.

Notes

To use fennel seeds and cumin seeds powder is necessary as they are good for digestion. Turmeric roots actually give warmth to respiratory system, to your body during winter season and there is medicinal use of it in cold and cough. Effect of turmeric roots should be balanced by using these spices and curd in this specific curry as fresh turmeric roots are more effective than turmeric powder. 
This curry is really good to consume twice or thrice during cold. But always remember it should be in small quantity because …..
