Corn is a starchy vegetable and cereal grain that has been eaten all over the world. It’s rich in fiber, vitamins and minerals. It is good source of iron too. It can also spike blood sugar levels as it contains starch.
Corn provides higher amounts of antioxidants than many other cereal grains. Itβs especially rich in eye-healthy Carotenoids.
Commonly boiled or roasted sweet corn on the cob and pop corn are famous among people , but it has been used as ingredient in processed foods like tortilla chips, cornmeal, corn flour, corn syrup, and corn oil.Whole corn is relatively low in fat, though corn oil β a highly refined cooking oil β is sometimes processed from corn germ, a side product of corn milling.

INGREDIENTS FOR SPICY CORN
- 2 Corn Cob Pressure cooked or boiled in salt water.
- 1 tsp oil
- 2 red dry chillies
- 5-6 curry leaves
- 2-3 spicy green chillies
- 1/2 tsp ginger paste
- 1 tsp sugar *optional*
- 1 tbsp lemon juice
- 4 tbsp sev an Indian snack consisting of long, thin strands of gram flour, deep-fried and spiced
- 1 tbsp coriander leaves finely chopped for garnishing
Spicy corn Recipe
Ingredients
- 2 Corn Cob Pressure cooked or boiled in salt water.

- 1 tbsp lemon juice

Instructions
- Remove corn kernels from boiled cobs.
- Crush half corn kernels and Keep other half corns as whole kernels.
- Heat the oil in a pan Add dry chillies, curry leaves and pinch of asafoetida.
- Now add green chilli and ginger paste and saute for few seconds.
- Add crushed and whole corn kernels, sugar and salt and mix well. Cook it for 5 minutes.
- Switch off the stove add 1 tbsp sev and lemon juice, mix well.
- Take spicy corn in serving bowl and garnish with sev and coriander leaves.
