Heat the oil and add 1 grated potato, 1 grated carrot,10 finely chopped French beans and 2 finely chopped tomatoes and fry them until well browned. Add water and boil it till you have 3 cups of stock remaining . Now strain it and keep it aside.
Note: the strainedvegetables can be frozen for 1-2 days and can be pureed and added to a thicksoup like Spinach , tomato Etc.
Recipe for the Soup
Heat the butter in a vessel and fry the onions and carrots for 3 minutes.2. Add the flour and fry again for ½minute.3. Add the vegetable stock and cook it for 20 minutes.4. Add cooked rice cook for few minute still the soup is mixed well with rice.5. Add cheese salt and pepper, stir well.6. Add coconut milk/almond milk cook fora minute n switch of the stove.7. Serve hot in a serving bowl and add lemon juice as per taste.
