Cook spinach in a covered pan without extra water for about 6 minutes until it is just soft. Chop it roughly.
Boil the potatoes until they are soft (Cauliflower,lightly cooked and divided into florets can be substituted for the potatoes.) Drain them, peel and cut into cubes.
Leave to cool and mix with spinach and apple cubes.
Blend the curd cheese with yogurt. Add salt and pepper as per taste and turn dressing into salad.
